Chocolate Coconut Energy Bites Recipe
These no-bake energy bites help satisfy your sweet tooth without adding any of the unhealthy sugars and additives found in store-bought snacks. Packed with satiating nut butter, chocolate chips and coconut, they're the perfect solution for breakfast, between-meal snack or after-dinner sweet.
INGREDIENTS2 cups quick oats ¾ cup almond butter 2 Tbsps. Navitas Organics Chia Seeds 1 Tbsp. ground flaxseed ½ cup maple syrup 1 Tbsp. vanilla extract ½ cup semisweet dairy-free chocolate chips ⅓ cup unsweetened coconut flakes Pinch sea salt |
DIRECTIONSMix all ingredients together in a large bowl until well combined. Move to the refrigerator and chill for at least 30 minutes. Makes 24 bites

- 2 cups quick oats
- ¾ cup almond butter

2 Tbsp. Navitas Organics Chia Seeds
- 1 Tbsp. ground flaxseed
- ½ cup maple syrup
- 1 Tbsp. vanilla extract
- ½ cup semisweet dairy-free chocolate chips
- ⅓ cup unsweetened coconut flakes
Pinch of sea salt
Directions
- Mix all ingredients together in a large bowl until well combined. Move to the refrigerator and chill for at least 30 minutes.
- When the mixture is firm, scoop out 1½ tablespoons at a time and roll into a small ball. Repeat until all mixture is used up.
- Refrigerate for 15 minutes, remove and enjoy!
- Can be kept refrigerated and covered for up to 2 weeks.
