Chocolate Chip Chia Cookies

1 Tbsp Navitas Organics Chia Seed Powder
3 Tbsp Water
1 Cup Brown Rice Flour
1½ Tbsp Navitas Organics Chia Seeds
¼ Cup Navitas Organics Coconut Sugar
1 tsp Baking Powder
¼ tsp Sea Salt
2 Tbsp Coconut Oil, melted
½ Cup Creamy Almond Butter
½ Cup Maple Syrup
1½ tsp Vanilla Extract
1¼ Cups Rolled Oats
½ Cup chopped Walnuts
1/3 Cup Chocolate Chips
Flaked Salt, for topping (optional)


Preheat the oven to 350° F. Place an oven rack in the center of the oven. Line a cookie sheet with parchment paper.

In a large bowl, mix together the chia seed powder with the water. Set aside momentarily.

In a medium bowl, mix together the brown rice flour, chia seeds, coconut sugar, baking powder and sea salt.

By now the seed mixture in the large bowl should have thickened. To this paste, add the coconut oil, almond butter, maple syrup, and vanilla extract, stirring well. Mix in the dry mixture into the wet, until combined. Fold in the oats, walnuts, and chocolate chips, and stir until a thick dough has formed. Drop rounded spoonfuls onto the prepared baking sheet, and flatten slightly into ½-inch thick rounds. Baked for 11-13 minutes, or until edge begin to turn golden. Remove from the oven and immediately sprinkle tops lightly with flaked salt, if using. Transfer cookies to a baking rack to let cool. Repeat with remaining dough.
