Chocolate Chip Chia Cookies Recipe

INGREDIENTS1 Tbsp. Navitas Organics Chia Powder 3 Tbsp. water 1 cup brown rice flour 1½ Tbsp. Navitas Organics Chia Seeds ¼ cup coconut palm sugar 1 tsp. baking powder ¼ tsp. sea salt 2 Tbsp. coconut oil, melted ½ cup creamy almond butter ½ cup maple syrup 1½ tsp. vanilla extract 1¼ cup rolled oats ½ cup raw walnuts, chopped ⅓ cup chocolate chips Flaked sea salt, for topping (optional) |
DIRECTIONSPreheat the oven to 350° F. Place an oven rack in the center of the oven. Line a cookie sheet with parchment paper and set aside, In a large bowl, mix together the chia seed powder with the water. Set aside momentarily. In a medium bowl, mix together the brown rice flour, chia seeds, coconut sugar, baking powder and sea salt. By now the seed mixture in the large bowl should have thickened. To this paste, add the coconut oil, almond butter, maple syrup, and vanilla extract, stirring well. Mix the dry ingredients into the wet, stirring until just combined. Fold in the oats, walnuts, and chocolate chips, and stir until a thick dough has formed. Drop rounded spoonfuls onto the prepared baking sheet and flatten slightly into ½-inch thick rounds. Bake for 11-13 minutes, or until edges have begun to turn golden. Remove from the oven and immediately sprinkle tops lightly with flaked salt, if using. Transfer cookies to a wire rack and let cool. Repeat with remaining dough. Makes 2 dozen cookies
