Chai Banana Bread Recipe

Cozy up with this deliciously fluffy and superbly spiced chai banana bread. Gluten-free and filled with a nutty flavor thanks to chickpea flour, it's the perfect breakfast loaf to enjoy with tea, coffee or your favorite creamy latte.

INGREDIENTS

3 large ripe bananas
½ cup butter, melted (or vegetable oil)
¾ cup granulated sugar
2 organic eggs
1 tsp. vanilla extract
1⅓ cups Navitas Organics Chickpea Flour
2 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
2 tsp. chai spice
½ cup chopped walnuts, optional

Chai Glaze:
½ cup organic powdered sugar
½ tsp. chai spice
1-2 Tbsp. milk of choice

DIRECTIONS

Preheat oven to 350°F. Grease and line an 8x4-inch loaf pan with parchment.
In a medium-sized bowl, mash banana and whisk in butter and sugar.
Whisk in eggs and vanilla until well combined.
Whisk in chickpea flour, baking powder, baking soda, salt, and chai spice. Add in walnuts and whisk together until no flour streaks remain.
Pour batter into prepared loaf pan and bake for 50 minutes or until a toothpick inserted into center comes out clean.
Make the glaze by whisking glaze ingredients together until mixture is smooth. Drizzle over loaf once fully cooled to room temperature.
Slice, serve and enjoy!
