Celeriac Soup Recipe

This soup is designed to help bolster your immune system.

INGREDIENTS

2 Tbsp Coconut Oil
½ Yellow Onion, diced
4 large cloves Garlic, minced
4 cups Celery Root, peeled and cut into ½-inch dice
2 Tbsp Navitas Organics Goji Berries
4 Cups Water
2 Tbsp yellow Miso Paste
1 Tbsp Apple Cider Vinegar
1/3 Cup Navitas Organics Cashews
Ground Pepper, for serving
Minced Parsley, for serving

DIRECTIONS

In a heavy-bottomed pot, warm the coconut oil over medium heat. Add the onion and sauté for 5 minutes. Add the garlic and sauté for 1 minute longer, stirring constantly. Mix in the celery root and Goji Berries, then pour in the water. Turn the heat up to high, bring the mixture to a boil, then reduce heat to medium-low and simmer for 20 minutes.

Transfer the soup to a blender and add the miso, vinegar and Cashews.

Blend until completely smooth and adjust seasonings as desired.

Serve warm with a sprinkle of ground pepper and parsley.
