Celeriac Soup Recipe
This soup is designed to help bolster your immune system.

DIRECTIONSIn a heavy-bottomed pot, warm the coconut oil over medium heat. Add the onion and sauté for 5 minutes. Add the garlic and sauté for 1 minute longer, stirring constantly. Mix in the celery root and Goji Berries, then pour in the water. Turn the heat up to high, bring the mixture to a boil, then reduce heat to medium-low and simmer for 20 minutes. Transfer the soup to a blender and add the miso, vinegar and Cashews. Blend until completely smooth and adjust seasonings as desired. Serve warm with a sprinkle of ground pepper and parsley. Makes 6 cups

½ yellow onion, diced
4 large cloves garlic, minced
4 cups celery root, peeled and cut into ½-inch dice

2 Tbsp. Navitas Organics Goji Berries
4 cups water
2 Tbsp. yellow miso paste
1 Tbsp. apple cider vinegar
⅓ cup cashew nuts
Ground pepper, for serving
Minced parsley, for serving
