While this smoothie really does taste deceptively (and fabulously) like a candy cane‚ even more surprising is its healthy vegetable base! Enjoy it around the holidays‚ or at any time of the year when wanting to satisfy a minty urge.

DIRECTIONSBlend the cauliflower, Cashews, dates, coconut water powder, vanilla, peppermint, and water together until completely smooth. Add the ice and blend once more until frosty. Makes 2 1/2 Cups

Ingredients
1 cup frozen cauliflower

3 Tbsp. Navitas Organics Cashew Nuts
2 Medjool dates, pitted
2 Tbsp. coconut milk or yogurt
1 tsp. vanilla extract
¼ tsp. peppermint extract
1 cup water
1 cup ice
Directions
Blend the cauliflower, cashews, dates, coconut milk or yogurt, vanilla, peppermint, and water together until completely smooth.
Add the ice and blend once more until frosty.
Pour into serving glasses and enjoy immediately!
