Ingredients
- ½ cup boiling water

½ cup Navitas Organics Cacao Powder
- 3 organic eggs
- ½ cup refined coconut oil, melted & cooled
- 1 cup organic cane sugar
- 1¼ cups all-purpose flour
- ¾ tsp. baking powder
- ½ tsp. baking soda
- ¼ tsp. sea salt
- Sprinkles, optional

- ¼ cup heavy whipping cream
- 3 tsp. pure maple syrup
- 2 cups heavy whipping cream

4 Tbsp. Navitas Organics Cacao Powder, sifted
- ½ cup powdered sugar, sifted

Directions
Make the cupcakes:
- Preheat oven to 375°F and line and grease a 12-cup muffin pan.
- Sift cacao powder into a large bowl. Add boiling water and mix well with a spatula until completed combined.
- Add eggs, melted coconut oil and sugar, and whisk until smooth.
- Add flour, baking powder, baking soda and salt, and mix with a spatula until just combined.
- Distribute batter evenly among muffin cups and bake for 15-17 minutes. Let cool in the pan for 10 minutes before removing and leaving on a wire rack to cool completely.
Make the ganache:
- Heat whipping cream in microwave for 45 seconds. Pour over cacao wafers in a bowl and let sit for 5 minutes.
- Mix together until a thick ganache forms. If ganache isn’t thickening, microwave for 10 more seconds and mix. Add in maple syrup and mix until incorporated.
Make the frosting:
- Add heavy whipping cream, cacao powder and powdered sugar to a large bowl.
- Using an electric whisk or stand mixer, gradually increase speed to medium and whisk until stiff peaks just start to form. Don’t overwhisk.
Assemble:
- Use a teaspoon to scoop a small hole out of the top of the cupcake. Use a spoon to pour ganache into hole.
- Scoop on frosting and spread out to a thick layer. Top with sprinkles, if using, and enjoy!
