This superfood twist on traditional rice pudding combines velvety coconut milk, a touch of cinnamon and exotic acai. The result is a luscious, antioxidant-rich treat that's both satisfying and nutritious! Top it off with berries and a sprinkle of hemp seeds for an irresistible finish.
Ingredients
- 1 cup jasmine rice, washed
- 1 cup plant-based milk
- 1 can coconut milk (13½ ounces)
- 2 Tbsp. brown sugar (or sub. pure maple syrup)
- 1 tsp. ground cinnamon
- ¼ tsp. salt

2 Tbsp. Navitas Organics Acai Powder
- 2 Tbsp. vegan butter

¼ cup Navitas Organics Goji Berries

2 Tbsp. Navitas Organics Hemp Seeds
- ½ cup fresh berries

Directions
- In a medium saucepan, mix rice, all milks, brown sugar, cinnamon, and salt.
- Bring mixture to a boil on medium-high heat, stirring to prevent rice from sticking to bottom of pan. Reduce heat and simmer for 20 minutes until rice is soft and liquid has been absorbed, stirring occasionally.
- Remove from heat, and add acai powder and butter. Stir until acai powder is combined and butter is melted.
- To serve, spoon rice pudding into two bowls, and top with goji berries, hemp seeds and fresh berries.
