Acai Cherry Gelato Recipe

This soothing gelato provides melt-in-your-mouth creaminess and a mega-cool fruity flavor. 

INGREDIENTS

¼ tsp Vanilla Extract (or 1/2 seeded Vanilla Bean) 
2 Tbsp Navitas Organics Cashew Whole Nuts
2 Tbsp Navitas Organics Acai Powder
2 Tbsp Navitas Organics Yacon Syrup (or 1.5 Tbsp. Agave Nectar)
4 Tbsp Cherry Juice Concentrate
4 large Medjool Dates
2 Cup frozen Cherries (plus more for garnish)

DIRECTIONS

Soak the cashews in water for 6 hours or overnight until extremely soft.

In a strong blender or food processor, blend all ingredients EXCEPT the frozen cherries until completely smooth. Add in the cherries, and pulse until fruit is coarsely chopped, but not fully blended.

Transfer mixture to a bowl and freeze for 4 hours or longer. Top with fresh or thawed frozen cherries before serving.
