Acai Bowl with Chocolate Tahini Coconut Granola

This wholesome bowl combines antioxidant-packed acai with creamy tahini and the irresistible crunch of granola infused with coconut, tahini and a decadent touch of chocolate. Whether it's a refreshing breakfast, midday snack or post-workout treat, this bowl has you covered!

INGREDIENTS

For the Granola:
2 cups gluten-free oats
2 cups coconut flakes
1⁄2 cup Soom Chocolate Tahini
1⁄4 cup Navitas Organics Hemp Seeds
1⁄2 cup pure maple syrup
1⁄2 cup Navitas Organics Cacao Nibs

For the Acai Bowl:
1 frozen banana
1 cup frozen strawberries
1 cup frozen raspberries
2 Tbsp. Soom Tahini
3⁄4 cup plant-based milk
4 Tbsp. Navitas Organics Acai Powder

DIRECTIONS

For the Granola:
Preheat oven to 325ºF. Line a sheet pan with parchment paper and set aside.
In a large bowl, combine all ingredients except cacao nibs and 1⁄4 cup chocolate tahini. Fold together until fully combined.

Transfer to lined sheet pan, spreading into an even layer. Bake for 18-20 minutes.

Remove from oven, sprinkle with cacao nibs and drizzle with chocolate tahini, if desired. Allow to cool completely.

Once cooled, break into smaller chunks. Set aside desired amount to top acai bowl and store remaining granola in an airtight container in a cool, dry place.


For the Acai Bowl:
Add all ingredients to a blender. If too thick, add milk, one tablespoon at a time, until smooth.

Pour acai mixture into bowls and top with fresh fruit, granola and extra drizzle of tahini, if desired. Enjoy!
