Vegan Almond Chia Seed Cookies Recipe

INGREDIENTS

1 cup almond flour
1 cup flour
¼ tsp. salt
¼ cup Navitas Organics Chia Seeds
4 tsp. Navitas Organics Pomegranate Powder (optional)
½ cup melted coconut oil
2 Tbsp. plant-based milk
¼ cup pure maple syrup
½ tsp. almond extract
1 tsp. vanilla extract

DIRECTIONS

Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
In a large bowl, mix almond flour, regular flour, salt, chia seeds and pomegranate powder (if using) until combined.
In a small bowl, mix coconut oil, milk, maple syrup, almond extract, and vanilla extract together.
Pour wet ingredients into dry ingredients and mix well.
Use your hands to scoop up a small spoonful of dough, roll into a ball and place on cookie sheet. Repeat with remaining dough.
Using a fork, press cookie down so fork makes an imprint. Turn fork 90° and press down again.
Bake for 12 minutes. The cookies will be slightly soft. Allow to cool and enjoy!
