Vegan Acai Blueberry Cheesecake Recipe

INGREDIENTS

Crust:
1 cup dates, pitted
½ cup almond flour
1 Tbsp. Navitas Organics Superfood+ Immunity Blend
1 tsp. cinnamon
¼ tsp. sea salt

Cheesecake Base:
1½ cups cashews, soaked
1 cup coconut cream
¼ cup pure maple syrup
1 Tbsp. Navitas Organics Acai Powder
⅓ cup coconut oil
Juice of 1 lemon
½ cup fresh or frozen blueberries
Berries, for garnish

DIRECTIONS

In a food processor, combine all cheesecake ingredients except blueberries. Blend for 2-3 minutes until mixture is smooth and creamy.
Remove half the batter and pour it into silicone molds, filling them halfway. Place on a flat surface in the freezer to firm up for at least 1 hour.
Add blueberries to other half of batter, blend until smooth, and pour into molds over first layer. Freeze for an additional hour.
Combine crust ingredients in food processor. Press filling into molds over cheesecake layer. Freeze for an additional hour. Remove cheesecakes from molds, top with berries and enjoy!
