Tofu Lettuce Wraps with Maca Peanut Sauce

These delicious lettuce wraps are made with fresh vegetables and crispy tofu, and drizzled with a flavorful five-ingredient peanut sauce that's boosted with adaptogenic maca powder. They're the perfect light, yet satisfying dish to serve as a healthy lunch or quick weeknight dinner.

INGREDIENTS

Tofu:
14 oz. extra-firm tofu
3 Tbsp. coconut aminos or soy sauce
½ Tbsp. pure maple syrup
5 Tbsp. arrowroot starch
Maca Peanut Sauce:
¼ cup creamy peanut butter
¼ cup coconut aminos or soy sauce
½ tsp. Navitas Organics Maca Powder
¼ tsp. ginger powder
2-3 Tbsp. water
For Serving:
1 cup purple cabbage, carrots, bell peppers, thinly sliced or shredded
1 small head green lettuce or cabbage
3-4 Tbsp. Navitas Organics Hemp Seeds
Green onions (optional)

DIRECTIONS

Wrap tofu in a clean towel and set something heavy on top. Press for 30 minutes.
Prepare peanut sauce by adding all ingredients except water to a small bowl. Whisk to combine then add a little water at a time and whisk until creamy. Set aside for serving.
Once pressed, slice tofu into ~3/4-inch cubes and add to a container with a lid. Add coconut aminos and maple syrup. Seal with lid and toss to combine. Let marinate for 15 minutes.
Heat oven to 400°F and line a baking sheet with parchment paper.
After 15 minutes, add arrowroot starch, cover and toss to coat.
Heat a nonstick skillet over medium heat. Once hot, add oil to prevent tofu from sticking. Add as much tofu as will fit comfortably in pan. Cook until golden brown on all sides, about 2-3 minutes per side, flipping with a fork or small spatula. Transfer to prepared baking sheet and bake for 10-15 minutes or until crispy and firm.
Prepare veggies for serving and set aside, then prepare lettuce by washing and drying and gently separating about 10 lettuce leaves.
Arrange cups/leaves on a platter and top each with about 4 cubes tofu. Top with veggies and herbs of choice, drizzle with peanut sauce and sprinkle with hemp seeds.
