Sweet & Sour Apple Salad

Light and crunchy with loads of flavor‚ this refreshing salad can be served as a starter‚ but could easily be doubled in serving size and made a full meal.
4 cups (packed) Green Cabbage shaved thinly
In a large bowl combine the cabbage, apples, almonds, goldenberries, crystallized ginger, and serrano pepper. Add the fresh ginger, lime, soy sauce, safflower oil and coconut sugar, and toss well. Refrigerate for 20 minutes to allow the flavors to combine. Taste and add salt and pepper if desired. Just before serving, add the arugula and toss lightly then transfer to serving plates.
