Fresh leafy salad made with Navitas Organics Goldenberries

Sweet & Sour Apple Salad Recipe

Light and crunchy with loads of flavor‚ this refreshing salad is perfect as a starter‚ or can easily be doubled in serving size and made a full meal. 

INGREDIENTS

4 cups green cabbage, shredded

2 green apples, cored and grated

½ cup slivered almonds

½ cup Navitas Organics Goldenberries

¼ cup crystalized ginger, finely chopped

½ serrano pepper, deseeded and minced

1 tsp. fresh ginger root, grated

1 lime, juiced

1 Tbsp. soy sauce

2 Tbsp. sunflower oil

2 Tbsp. maple syrup

2 cups baby arugula

Sea salt and black pepper, to taste

DIRECTIONS

In a large bowl combine the cabbage, apples, almonds, goldenberries, crystallized ginger, and serrano pepper.

Whisk together the fresh ginger, lime juice, soy sauce, sunflower oil, maple syrup, and a pinch of salt and pepper. Drizzle over the cabbage blend and toss well to coat.

Refrigerate for 20 minutes to allow the flavors to combine. Taste and adjust seasonings if desired. Just before serving, add the arugula and toss lightly then transfer to serving plates.
