Spiced Acai Energy Bars

These healthy energy bars keep well in the freezer—try doubling the batch and keep on hand for whenever a boost is needed.

INGREDIENTS

½ tsp Ginger Powder
½ tsp ground Cinnamon
¼ Cup dried Apricots
¼ tsp Vanilla Extract
¾ Cup raw Almonds
¾ Cup pitted Medjool Dates (about 11 or 12)
3 Tbsp Navitas Organics Acai Powder
2 Tbsp Raisins
pinch of Salt (optional)

DIRECTIONS

Mix the all the ingredients together in a food processor just until a dough has formed (allowing some almonds to remain coarsely chopped).

Place a sheet of saran wrap on a cutting board and spill the dough out on top. Use your hands to press and form a 1 inch thick rectangle. Wrap and place in the freezer for 30 minutes? then cut into 8-10 rectangles. Best served cold. Serves 8-10.
