Roasted Chickpea Trail Mix Recipe

This Indian-inspired blend combines roasted chickpeas, crunchy pretzels, healthy nuts and savory spices for a nutritious snack any time you need a quick energy boost.

INGREDIENTS

1 cup cooked chickpeas, patted dry
Dash of Navitas Organics Turmeric Powder, chili powder, cayenne, ground coriander, cumin and ginger
½ tsp. melted coconut oil
1 cup gluten-free pretzel sticks
¾ cup Navitas Organics Cashew Nuts
¾ cup raw pistachios
½ cup freeze-dried mango bits

DIRECTIONS

Preheat oven to 400˚F and line a baking pan with foil.

In a bowl, toss the chickpeas in melted coconut oil and spices. Scatter on baking pan and roast for ~20 mins or until crispy, stirring occasionally.

In a separate bowl, toss together remaining ingredients, plus roasted chickpeas.

Store in air-tight containers.

Makes 4 cups
