INGREDIENTS½ Cup Raisins |
DIRECTIONSPreheat oven to 300 degrees F. Line 2 baking sheets with parchment paper. Break the rice cakes into large pieces over a bowl‚ and place the contents in a food processor. Use the pulse function on the machine several times to grind into cereal-size chunks. Add the raisins‚ almonds‚ Hemp Seeds‚ Maca‚ dark chocolate and Cacao Nibs, and pulse several more times to combine. Remove the mixture from the processor and place back in the large bowl. Set aside. Back inside the food processor (no need to clean it out)‚ add the dates‚ almond butter‚ coconut oil and agave nectar. Blend until as smooth as possible - it's not a problem if a few chunks from the dates remain. Use a spatula or knife to extract the wet mixture from the processor and add it into the bowl with the dry ingredients. Mix/knead the ingredients together into a sticky‚ evenly coated cereal. Divide the mixture between the two prepared baking sheets‚ and spread out across the surface of each of the pans into a flat layer. Place the sheets into the oven and bake for 20 minutes. Remove from the oven and let cool before serving. Store in an airtight container when not in use. Makes 6 cups
