Enjoy the taste of the season in hummus form with this fall-flavored superfood dip.
3 Tbsp Olive Oil
2 tsp Harissa Spice Powder
¾ cup Pumpkin Puree (canned or freshly cooked)
1 15-ounce can Chickpeas, drained
1 Garlic clove, chopped
1 Tbsp Navitas Organics Maca Powder
1/3 cup Water
2 Tbsp Tahini
2 Tbsp fresh Lemon Juice
½ tsp Sea Salt
1 Tbsp minced fresh Parsley or Cilantro
In a small prep bowl, mix together 1 tablespoon olive oil and 1 teaspoon harissa powder. Set aside.
In a food processor, combine 2 tablespoons of olive oil, 1 teaspoon harissa, pumpkin puree, chickpeas, garlic, Maca Powder, water, tahini, lemon juice, and salt. Puree until smooth and creamy. Transfer to a serving dish. Drizzle with harissa oil mix, and sprinkle with pepitas and herbs.
