Pomegranate Amaranth Porridge
Amaranth offers a slightly nutty‚ chewy texture amongst smooth coconut yogurt‚ which are both accentuated by the sweet-tart flavor of Pomegranate.
¼ Cup dry Amaranth
Combine the amaranth and apple juice in a small saucepan over medium-high heat. Bring to a boil, then reduce heat to a low simmer. Cook for about 30 minutes until amaranth is tender and a loose porridge has formed. Remove from heat and whisk in the coconut yogurt and Pomegranate Powder. To serve, top with pomegranate seeds.
