Mint Chip Smoothie Bowl Recipe

Your friends will be green with envy for this antioxidant-rich superfood smoothie bowl.

INGREDIENTS

1 cup grated cauliflower, frozen

1 sliced banana, frozen

 cup almond milk

1 handful spinach

½ avocado

½ tsp Navitas Organics Matcha Powder 

1-2 Medjool dates, pitted

¼ tsp. peppermint extract

½ tsp. vanilla extract

1 tsp. Navitas Organics Superfood+ Greens Blend, optional

Pinch sea salt

Navitas Organics Cacao Sweet Nibs, for serving

Coconut flakes, for serving

DIRECTIONS

Place all the ingredients except for the cacao sweet nibs and coconut flakes in a blender, and blend until smooth and creamy. 

Add more almond milk if needed, one tablespoon at a time, being careful not to dilute the smoothie too much (you want it to be thick).

Pour into a bowl and top with cacao nibs and coconut flakes. 

Enjoy!
