Ingredients
- 1 cup flour
- ½ cup whole wheat flour

2 Tbsp. Navitas Organics Maca Powder
- 2 tsp. cinnamon
- 1 tsp. baking powder
- ½ tsp. baking soda
- ½ tsp. salt
- 1 cup dates, pitted and chopped
- ½ cup unsalted creamy almond butter
- ⅓ cup maple syrup
- 2 tsp. vanilla extract
- ½ cup coconut oil melted
- ½ cup plant-based milk
Directions
- Preheat oven to 350°F. Line a muffin tin with non-stick muffin liners.
- In a large bowl, mix together flours, maca powder, baking powder, baking soda, cinnamon, and salt. Add chopped dates and mix until dates are coated in flour. Set aside.
- In a medium bowl, mix together almond butter, maple syrup, vanilla, coconut oil, and milk.
- Add wet ingredients to dry and stir until just mixed.
- Scoop batter into muffin liners so they are about 3/4 full.
- Bake for 13-15 minutes or until a toothpick comes out clean when inserted into the middle of a muffin.
- Allow muffins to cool in muffin tin, then transfer to a wire rack to continue cooling. Enjoy!
