Maca Cinnamon Date Muffins Recipe

These flavorful muffins are deliciously energizing and surprisingly refined sugar-free for the perfect family-friendly bites to grab on the go! Boosted with maca powder, which has a malty, caramel-like flavor, these muffins pair perfectly with coffee, hot chocolate or any cozy latte.

INGREDIENTS

1 cup flour
½ cup whole wheat flour
2 Tbsp. Navitas Organics Maca Powder
2 tsp. cinnamon
1 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
1 cup dates, pitted and chopped
½ cup unsalted creamy almond butter
⅓ cup maple syrup
2 tsp. vanilla extract
½ cup coconut oil melted
½ cup plant-based milk

DIRECTIONS

Preheat oven to 350°F. Line a muffin tin with non-stick muffin liners.
In a large bowl, mix together flours, maca powder, baking powder, baking soda, cinnamon, and salt. Add chopped dates and mix until dates are coated in flour. Set aside.
In a medium bowl, mix together almond butter, maple syrup, vanilla, coconut oil, and milk.
Add wet ingredients to dry and stir until just mixed.
Scoop batter into muffin liners so they are about 3/4 full.
Bake for 13-15 minutes or until a toothpick comes out clean when inserted into the middle of a muffin.
Allow muffins to cool in muffin tin, then transfer to a wire rack to continue cooling. Enjoy!
