Lemon Goji Bars Recipe

INGREDIENTS

For The Crust:
½ cup unsalted butter
¼ cup granulated sugar
1 cup all-purpose flour
¼ tsp. salt
1 tsp. Navitas Organics Superfood+ Immunity Blend
For The Lemon Layer:
1 cup granulated sugar
2 Tbsp. all-purpose flour
½ cup lemon juice
3 eggs
1 tsp. lemon zest
⅓ cup Navitas Organics Goji Berries

DIRECTIONS

Preheat oven to 350°F.

Using a mixer, beat together butter, sugar, flour, Immunity Blend and salt until well combined.

Press dough in an even layer into a parchment-lined pan and bake for 20 minutes.

Mix together eggs, lemon juice, lemon zest, flour and sugar until just combined.

In a separate bowl, soak goji berries in water.

Remove crust from oven and pour lemon layer over crust. Top with soaked goji berries and bake for 20-25 minutes at 325°F.

Remove from oven and allow to cool completely. Once cooled, transfer to fridge to set for 2 hours. Slice and serve cold with a dusting of powdered sugar!
