Goji Berry Tart Recipe

This delightful dessert combines a crunchy sugar cone crust with a luscious filling bursting with the tangy-sweet goodness of goji berries. Top it off with a scoop of your favorite vanilla ice cream for the ultimate summer treat!

INGREDIENTS

2 cups crushed gluten-free sugar cones
3½ Tbsp. butter, room temperature
2 cups mixed berries
½ cup Navitas Organics Goji Berries
1 tsp. arrowroot powder
1 tsp. monk fruit sweetener
Optional toppings:
Vanilla ice cream of choice
Whipped cream of choice
Fresh mint

DIRECTIONS

Preheat oven to 350°F.

Combine butter and sugar cones in a food processor and blend until a fine crumb mixture forms.

Press about 2-3 tablespoons into bases of mini tart molds. Bake for 5 minutes and set aside.

In a mixing bowl, combine mixed berries, goji berries, arrowroot starch, and sweetener.

Evenly distribute berry mixture to each tart mold and bake for an additional 25 minutes.

Serve tarts with toppings of choice and enjoy!
