Glazed Blueberry Goji Muffins Recipe

These deliciously fluffy and perfectly sweet blueberry goji muffins come together in less than half an hour and make the perfect on-the-go breakfast on busy days! As an added bonus, these muffins are not only studded with sweet blueberries and dried goji berries, they're also drizzled with a goji powder glaze.

INGREDIENTS

1½ cups Navitas Organics Chickpea Flour
1½ tsp. baking soda
½ cup sugar
3 eggs
1 cup yogurt
¼ cup vegetable oil
1 cup frozen or fresh blueberries
½ cup Navitas Organics Goji Berries

Glaze:

1 cup powdered sugar
1 Tbsp. Navitas Organics Goji Powder
2-3 Tbsp. water for desired consistency

DIRECTIONS

Preheat oven to 375˚F.
Mix together chickpea flour and baking soda in a large mixing bowl and set aside.
Mix together eggs, sugar, vegetable oil, and yogurt in a separate bowl.
Add the dry ingredients to the wet ingredients in two stages, mixing with a spatula just enough to combine.
Gently fold in blueberries and goji berries.
Use an ice cream scoop or large spoon to scoop batter into lined muffin tin and bake for 20 minutes until a skewer comes out clean.
Mix together the glaze ingredients and drizzle over muffins once they have cooled. Enjoy!
