Glazed Blueberry Goji Muffins Recipe
These deliciously fluffy and perfectly sweet blueberry goji muffins come together in less than half an hour and make the perfect on-the-go breakfast on busy days! As an added bonus, these muffins are not only studded with sweet blueberries and dried goji berries, they're also drizzled with a goji powder glaze.

Ingredients
1½ cups chickpea flour
- 1½ tsp. baking soda
- ½ cup sugar
- 3 eggs
- 1 cup yogurt
¼ cup sunflower oil
- 1 cup frozen or fresh blueberries

½ cup Navitas Organics Goji Berries
- 1 cup powdered sugar
- 1 Tbsp. Navitas Organics Goji Powder
- 2-3 Tbsp. water for desired consistency

Directions
- Preheat oven to 375˚F.
- Mix together chickpea flour and baking soda in a large mixing bowl and set aside.
Mix together eggs, sugar, sunflower oil, and yogurt in a separate bowl.
- Add the dry ingredients to the wet ingredients in two stages, mixing with a spatula just enough to combine.
- Gently fold in blueberries and goji berries.
- Use an ice cream scoop or large spoon to scoop batter into lined muffin tin and bake for 20 minutes until a skewer comes out clean.
- Mix together the glaze ingredients and drizzle over muffins once they have cooled. Enjoy!
