Cranberry Pomegranate Mojito
Slightly sweetened with local cranberries and boosted with sustainably sourced superfoods, this healthier take on a classic cocktail is sure to impress your guests.
4 oz sustainably sourced white rum (substitute kombucha for non-alcoholic version)
4 oz cranberry simple syrup (see ingredients and directions below)
20 mint leaves
2 tsp Navitas Organics Pomegranate Powder
4 oz sparkling water
Ice as needed
Cranberry Simple Syrup:
2 cups fresh local cranberries
4 cups water
1 cup Navitas Organics Coconut Palm Sugar
Add Coconut Palm Sugar, water and cranberries to a medium-sized saucepan. Simmer over medium heat, stirring occasionally until the cranberries have been cooked down.
Next, place a mesh colander over a mason jar and pour the cranberry mixture into the jar. Discard the cranberries remaining in the colander, and store your cranberry simple syrup in the refrigerator until you are ready to use.
Meanwhile, add 10 mint leaves and a half lime (sliced) to each glass. Muddle together to extract the flavor of the mint.
Next, add rum, cranberry simple syrup, Pomegranate Powder, ice and sparkling water to a cocktail shaker and shake well.
Pour shaken mixture evenly into each glass and top with a few fresh cranberries for garnish.
Sip and enjoy responsibly.
