Chewy Hemp Bars with Chocolate Drizzle Recipe

A chewy, chocolatey on-the-go treat you can take with you for sustained energy and craving satisfaction.

INGREDIENTS

For the bars:

1 cup dates

3/4 cup oats

1/2 cup shredded coconut (unsweetened)

1/4 cup Navitas Organics Hemp Powder

1/4 tsp salt*

2 Tbsp cashew butter

1/2 tsp vanilla

1 Tbsp collagen (optional)

For the chocolate drizzle:

2 Tbsp coconut oil

2 Tbsp Navitas Organics Cacao Powder

1 tsp maple syrup

pinch of salt

DIRECTIONS

Pour hot water over the dates and allow to sit for 2-3 minutes to soften.

Add oats to a food processor and pulse until they are broken down, but not too fine.

Drain the water from the dates and add them to the food processor with the oats and the remaining bar ingredients. Pulse until dates form a paste and everything is well combined.

Spread the mixture in a small pan lined with parchment paper and flatten to about 1/4-inch thick.

Make the chocolate drizzle by mixing the coconut oil, Cacao Powder, maple syrup and salt--melting just until it is a thick sauce.

Drizzle the sauce over the bars and refrigerate for at least 10 minutes. Cut into small bars and store them in the refrigerator.
