Beauty and the Beet Salad Recipe
Full of plant-based protein, vitamins, minerals, antioxidants and probiotics, this salad is wonderful for your health—inside and out!
INGREDIENTS¼ cup olive oil 1 tsp. Navitas Organics Superfood+ Berry Blend Zest and juice of one lemon 1 tsp. sea salt 5 ounces baby spring greens 2 cups cooked quinoa 8 small roasted beets, peeled and cut into eighths ¼ cup Navitas Organics Mulberries 6 oz. blackberries ¼ cup roasted macadamia nuts, chopped |
DIRECTIONSMake the dressing first: in a small bowl, whisk together the olive oil, Beauty Boost, zest and juice of one lemon, and salt. Place the greens inside a large bowl, and toss with the quinoa and dressing. Scatter the beets, Mulberries, blackberries and macadamia nuts on top. Serve immediately. Makes 4 servings

- Zest and juice of one lemon
- 1 tsp. sea salt
- 5 ounces baby spring greens
- 2 cups cooked quinoa
