Zucchini Bread with Sweet Cacao Crunch Recipe

Add a new dimension of flavor to the classic zucchini bread with lightly sweetened and deeply chocolatey cacao nibs!

 

INGREDIENTS

3 cups whole wheat flour

1 tsp. salt

1 tsp. baking soda

1 tsp. baking powder

1 Tbsp. cinnamon

3 eggs

1 cup applesauce

2 cups brown sugar

1 Tbsp. vanilla extract

2 cups zucchini, grated

½ cup Navitas Organics Cacao Sweet Nibs

DIRECTIONS

Preheat oven to 325°F and grease two 8x4 inch loaf pans.
Sift flour, salt, baking powder, baking soda and cinnamon together in a small bowl.
Beat eggs, applesauce, brown sugar and vanilla together in a large bowl until smooth. Add sifted ingredients and mix until just bended. Stir in zucchini and cacao nibs untl combined.
Pour batter into prepared pans and bake for 40-50 minutes, or until a until a tester comes out of the center clean. 
Makes two 8x4 inch loaves
