Pineapple Tofu Kabobs

Great for the grill!

A celebration of flavor and texture‚ these kabobs are the perfect party fare!

INGREDIENTS

⅓ Cup Navitas Organics Coconut Palm Sugar
3 Tbsp Coconut Oil (melted)
¼ Cup fresh Lime Juice
¾ tsp Sea Salt
1½ tsp Ginger Powder
1½ Cups organic extra firm Tofu (cut into 1-inch cubes)
1½ Cups Pineapple (cut into 1-inch cubes)
1½ Cups Red Onion (cut into 1-inch squares)

DIRECTIONS

For the marinade:
In a large bowl, whisk together the coconut sugar, coconut oil, lime juice, sea salt and ginger powder.

For the kabob:
Add the prepared tofu,pineapple and red onion and toss well. Cover and let stand at room temperature for 30 minutes to marinate. Heat a grill surface (stovetop or outdoor). Divide the marinated ingredients among skewers to make kabobs. Grill the kabobs, turning about every 2 minutes, until lightly charred on each side and cooked through.
