A celebration of flavor and texture‚ these kabobs are the perfect party fare!
Ingredients
- ⅓ Cup Navitas Organics Coconut Palm Sugar
- 3 Tbsp Coconut Oil (melted)
- ¼ Cup fresh Lime Juice
- ¾ tsp Sea Salt
- 1½ tsp Ginger Powder
- 1½ Cups organic extra firm Tofu (cut into 1-inch cubes)
- 1½ Cups Pineapple (cut into 1-inch cubes)
- 1½ Cups Red Onion (cut into 1-inch squares)
Directions
For the marinade:
- In a large bowl, whisk together the coconut sugar, coconut oil, lime juice, sea salt and ginger powder.
For the kabob:
- Add the prepared tofu,pineapple and red onion and toss well. Cover and let stand at room temperature for 30 minutes to marinate. Heat a grill surface (stovetop or outdoor). Divide the marinated ingredients among skewers to make kabobs. Grill the kabobs, turning about every 2 minutes, until lightly charred on each side and cooked through.
