Parsnip 'rice' stands up well to flavoring with herbs and spices‚ but it has a distinctive flavor of its own (far milder than you might expect)‚ and the texture is just right.
Ingredients
- 2 Tbsp Navitas Organics Hemp Seeds
- 1 Cup Fresh or Frozen Green Peas
- 1 lb Parsnips, peeled and roughly chopped
- ¼ tsp Sea Salt
- Dash of Black Pepper
- 1 Tbsp Hemp Oil or High-Quality Oil like Flax, Sacha Inchi, Avocado, or Olive Oil
- Juice of ½ Lemon
- ¼ Cup (or small handful) Chopped Fresh Basil
Directions
Bring a small pot of water to a boil. Blanch the peas until bright green and tender. Submerge in ice water to stop cooking and preserve color; drain and set aside.
Place parsnips, hemp seeds, sea salt, and pepper in a food processor. Process till the mixture is finely chopped and resembles rice.
Turn parsnip mixture into a bowl and toss with the peas, hemp oil, lemon, and basil. Done!
