Berry Crumble Bars Recipe

These irresistible crumble bars are buttery soft and wonderfully juicy. Easy to make and infused with immune-supporting elderberry powder, they're healthy, delicious and perfect for dessert or as an afternoon treat.

INGREDIENTS

Berry Filling:

4 cups frozen berries

2 Tbsp. maple syrup

1½ Tbsp. Navitas Organics Elderberry Powder

1½ tsp. agar powder

Crust:

1½ cups cassava flour

1½ cups almond flour

⅓ cup monk fruit sweetener

2 eggs

⅔ cup butter, melted

1½ tsp. apple cider vinegar

1 tsp. vanilla extract

1 tsp. baking soda

DIRECTIONS

Preheat oven to 350˚ F. Line an 8x8-inch baking pan with parchment paper.

Add frozen berries, maple syrup and elderberry powder to a small saucepan and simmer over low heat for about 20 minutes until the fruits have broken down. Whisk in agar powder and set aside.

To prepare the crust, combine cassava flour, almond flour, monk fruit sweetener and baking soda.

In a separate bowl, add eggs, butter, apple cider vinegar and vanilla extract. Whisk until combined.

Add wet ingredients to dry and mix well.

Press ¾ of the crust mixture into the lined baking pan evenly. Pour berry mixture on top and sprinkle leftover crust mixture over the top. Bake for 25-30 minutes.

Remove from oven and let cool for 20 minutes. Slice into squares and enjoy!
