Crispy baked sweet potato fries meet a zesty, nutrient-packed green goddess dip made with Superfood+ Sea Veggie Blend in this irresistible recipe. Perfect as a snack, side or appetizer, the fries and dip are as nourishing as they are satisfying!
Ingredients
- 2 lbs. sweet potatoes (about 2 medium-large or 3 medium)
- 2 Tbsp. olive oil
- ½ tsp. salt
- ¼ tsp. pepper
- 1 cup plain yogurt of choice (sub. plant-based sour cream or mayo for richer texture)
- 1 cup fresh parsley
- 1 cup mixed soft leafy herbs (dill, mint, basil, cilantro, and/or tarragon)
- 2 Tbsp. chives, chopped
- 2 Tbsp. lemon juice

- 1 clove garlic, chopped
- 1 Tbsp. capers (optional)
- 1 Tbsp. olive oil
- ¼ tsp. salt
- ¼ tsp. freshly ground black pepper

Directions
- Preheat oven to 450° F and line a baking sheet with parchment paper.
- Peel sweet potatoes and cut off ends. Cut into ¼-inch strips and add to a large mixing bowl with olive oil, salt and pepper. Toss until evenly coated.
- Arrange fries in a single layer on prepared baking sheet and don't overcrowd. Bake for 15 minutes, then flip and bake for 10-15 more minutes, or until crispy.
- While fries are baking, add all dip ingredients to a blender or food processor and blend until smooth. Add more salt, pepper or lemon to taste, if desired.
- Serve sweet potato fries warm with the dip and enjoy!
