Vegan White Chocolate Pumpkin Bark

This easy-to-make chocolate bark involves a handful of ingredients, has multiple textures and looks fancy, but it's far from complex. Keep some on hand for a delicious fall indulgence or wrap it up for a quick and easy gift for friends and love ones. 




Candied Pecans:

1 cup Pecans

1/2 cup Navitas Organics Coconut Palm Sugar

1/2 tsp Sea Salt

1/2 tsp Pumpkin Spice

1/2 tsp Cinnamon

2 Tbsp Water

Chocolate Bark:

2 cups Vegan White Chocolate Chips

1 tsp Cinnamon

1 tsp Pumpkin Spice

1/3 cup Coconut Oil, melted

1 tsp pure carrot juice or powder



Add all ingredients except pecans to a large pan. Cook for 2-3 minutes until boiling. Add pecans and cook for 3 more minutes. Remove from heat and place onto a sheet to cool for 20 minutes.

Place 1 1/2 cups of white chocolate chips in a large bowl and the remaining 1/2 cup in a smaller bowl. Divide the spices and coconut oil into each. Place in the microwave for 30 seconds, removing every 10 seconds and stirring to combine. Once both portions are fully melted, mix in the carrot juice or powder to the smaller bowl.

In a baking pan layered with wax paper, layer in the white chocolate. Then, layer the orange chocolate with a spoon in rows. After you've made rows, take a toothpick, skewer or knife and run it through them to create a design.

Top with candied pecans and store in the fridge to cool for 15 minutes.

Remove from pan, slice into triangles and enjoy!
