Peanut Butter Cookie Protein Granola Recipe

This granola is reminiscent of a classic peanut butter cookie—but it's healthy granola! It's high in protein, sweetened with pure maple syrup and deliciously satisfying. The perfect topping for smoothie bowls or ice cream, it's even just as tasty when enjoyed in the classic style—with milk or yogurt and some fruit.

INGREDIENTS

3 cups Gluten-Free Oats

3/4 cups Dry Roasted Peanuts

3/4 cup Maple Syrup

1/2 tsp Salt

1/4 cup Coconut Oil, melted

1 scoop Navitas Organics Vanilla & Greens Essential Blend

2/3 cup Peanut Butter

1/2 tsp Vanilla Extract

DIRECTIONS

Preheat oven to 325° F.

Melt coconut oil and mix with Essential Blend. Add remaining ingredients except oats and mix well.

Add oats and peanuts and mix well.

Pour mixture over parchment-lined baking sheet. Press down firmly and bake for 15-20 minutes.

Stir/flip the granola, press down with the back of a spatula and bake for another 15-20 minutes, stirring every 10 minutes.

Cut or scoop, serve as desired and enjoy!
