Goji Quinoa Cookies
Go ahead and enjoy the nutty and warmly spiced raw dough, but save some for the oven!
½ Tbsp Water
Preheat oven to 325 degrees F. Line two baking sheets with parchment or silicone mats.
In a food processor, blend the raisins and the ½ Tbsp water until pureed. Place into a mixing bowl. Add all of the ingredients and stir well until the dough comes together (it will be pretty sticky). Scoop even amounts of dough onto the cookie sheets. Flatten the dough with your fingers. Bake for 15 minutes or until golden brown. Enjoy!
*You can pulse oats in the food processor until they become a fine flour. You can also usually find oat flour in the bulk section of natural food stores, but why not make your own?
