Gingerbread Bliss Balls

These gingerbread cookie bites are healthy enough to enjoy as an everyday snack, but festive enough to bring to your next holiday party!


1 cup Navitas Organics Whole Cashew Nuts

1/2 cup Unsweetened Coconut Flakes

1 cup Medjool Dates, pitted

1/2 tsp Vanilla Extract

1 tsp Ground Ginger

1/4 tsp Ground Nutmeg

1/2 tsp Cinnamon

1/8 tsp Salt

1/3 cup Navitas Organics Coconut Hemp Pumpkin Seeds


Add the Cashews and coconut to a food processor and blend until you get a fine sand-like texture. Add the dates and process again to combine.
Add the vanilla extract, spices and salt and process again until well combined. The mixture should be sticky and hold together when pinched.
Roll into 12-14 balls and place on a plate. 
To the empty food processor, add 1/3 cup Coconut Hemp Pumpkin Seeds. Process until finely ground (a few larger pieces are ok). Add to a shallow bowl.
Roll the balls into the ground pumpkin seeds to coat.
Store bliss balls in an airtight container in the freezer or refrigerator.
Makes 12-14 Bites
