Chocolate Chip Oat Bars

Take these delicious & omega fatty acid-rich bars on the go for a filling snack anytime, anywhere. 

 

INGREDIENTS

1½ Cup Gluten-Free rolled Oats
½ Cup Wheat Flour
½ tsp Salt
⅓ Cup Navitas Organics Chia Seeds
⅓ Cup Mini Chocolate Chips
¼ Cup Navitas Organics Cacao Nibs
¼ Cup Coconut Oil
¼ Cup Almond Milk
¾ tsp Baking Soda
1 Tbsp Navitas Organics Chia Powder
1 Cup Medjool Dates (about 12 large)
1 Tbsp Vanilla Extract

DIRECTIONS

Preheat oven to 350 degrees F. Lightly grease a baking sheet.

In a small saucepan, melt the coconut oil into a liquid. Pour coconut oil into a food processor and add in dates, almond milk, vanilla extract and Chia Powder. Blend until a smooth paste has formed, stopping machine and scraping down the sides if needed.

In a large bowl, mix together oats, flour, baking soda, salt and Hemp Seeds.  Stir in date mixture and mix well. Fold in chocolate chips and Cacao Nibs.

Spread mixture onto baking sheet with a spatula into a half-inch layer. Cut wet dough with a knife into 4” x 2” rectangles or desired shape.

Bake for 12-15 minutes or until edges begin to turn golden brown.

Let cool before serving.
