Chocolate Chip Cookies

Enjoy these decadent treats with a healthy twist!

INGREDIENTS 

2 cup Navitas Organics Coconut Palm Sugar
4 oz Navitas Organics Cacao Sweet Nibs
1 Cup Butter (softened)
2 Eggs
1 tsp Vanilla Extract
2 Cups Unbleached Flour
2½ Cups Oats‚ measured then powdered in food processor
1/2 tsp Salt
1 tsp Baking Powder
1 tsp Baking Soda
12 oz Chocolate Chips

DIRECTIONS

Preheat oven to 375 degrees. Line 2 baking sheets with parchment paper.

Cream butter and sugar until light and fluffy. Add eggs one at a time‚ then add vanilla. Beat for approximately 5 minutes. In the meantime‚ combine flour‚ oats‚ salt‚ baking powder and soda in a separate bowl and mix well. Add to butter mixture. Stir in Cacao Nibs and chocolate chips.

Using a small scoop‚ scoop out cookies and place on baking sheet 2 inches apart. Bake for approximately 12 minutes.

Makes 1 dozen cookies
