¾ Cup Navitas Organics Coconut Palm Sugar
1½ Tbsp Navitas Organics Cacao Butter
1 Tbsp Navitas Organics Lucuma Powder
4 large Granny Smith Apples (cored and sliced into eighths)
Juice of one Lemon
½ Cup Canned Light Coconut Milk
½ tsp Sea Salt
2 Cup Finely chopped Raw Nuts and Seeds (such as Pecans, Almonds, Chia Seeds, Hemp Seeds, Coconut Shreds, etc.)
Fill a large pot halfway with cold water. Cover a large tray or baking sheet with parchment paper. Set both aside.
Lightly brush the exposed sides of the apple with lemon juice to prevent browning and set aside.
In a medium pot over medium-low heat, combine the coconut milk, Coconut Palm Sugar, Cacao Butter, Lucuma and sea salt. Whisk together to fully combine and bring the mixture to a slight boil – when bubbles just begin to appear. Reduce the heat to low and cook, stirring constantly so as not to burn the sugar, for 10 minutes until mixture is thick and dark. Turn off the heat and place the pot carefully in the prepared water bath to stop the cooking. Let cool for just a moment, then remove.
Spread the chopped nuts or seeds out onto a plate. Dip the skin side of each apple slice into the caramel sauce, then roll in the nuts or seeds. Place the coated slice on the parchment-covered tray and repeat. When all the apple slices are covered, transfer the tray to the refrigerator and let cool for 30 minutes to allow the caramel to fully set.
Slices may be served cold or at room temperature and will last a couple days, refrigerated.
