Cacao Protein Pancakes with Maqui Berry Sauce
These chocolatey, protein pancakes are big‚ fluffy‚ thick‚ delicious and‚ best of all‚ they're packed with superfoods!
Coconut oil, for cooking
1 Tbsp Navitas Organics Cacao Powder
¼ cup Fresh or Frozen Berries
¼ cup Plain Greek Yogurt
1 tsp Navitas Organics Maqui Powder
1 Tbsp Cacao Sweet Nibs
Make the pancakes: Coat a skillet with coconut oil and heat on medium heat. Mix together Cacao Powder, Essential Blend, oat flour, coconut flour, baking soda and salt. Add egg whites, applesauce and almond milk to the mix and combine well. The batter will be thick.
Add half of the mixture to the heated pan and cook for about 5 minutes or until the pancake easily moves around the pan. Flip and cook for 2 more minutes. Continue until all batter is used. You can also make one pancake and just use all of the batter at once.
Make the sauce: Thaw frozen berry blend if frozen. Combine with Greek yogurt and Maqui powder. Spread over pancakes. Top with Cacao Sweet Nibs and enjoy!
