While there may not be any yogurt inside this frozen dessert‚ the flavor certainly suggests it thanks to mineral-rich raw cashews. Super fruits – acai‚ goji‚ pomegranate and strawberries here – blend extremely well with a little bit of balsamic vinegar‚ which helps to bring out their sweet flavor even further.
2 Cups unsweetened Almond Milk
In a blender, combine the almond milk and cashews. Blend into a smooth cream. Add all the remaining ingredients and blend well. Transfer mixture to a sealable container, and freeze for 6-7 hours, or until frozen through. (Alternatively, use an ice cream machine and follow manufacturer’s instructions.) To serve, let defrost for 5-10 minutes to soften, then scrape the frozen blend with a spoon into a fluffy “snow,” and gather into ice-cream-like balls. Place in serving bowls as desired.
